Steak & Pepper Stir-Fry

BBQ T-Bone Steak Pepper Stir Fry
Ingredients
- 4 good size T-bone steaks
- 4 different color peppers: red, green, yellow and orange
- 4 different color small peppers (optional)
- ½ red onion
- ½ white onion
- 2 cups mixed white and wild rice combination
- Salt
- Pepper
- Olive oil
- 4 cups water
Preparation

Tenderize steak with meat tenderizing mallet. Sprinkle meat with salt and pepper.

BBQ the steak until meat is seared on the outside, and almost done but still a bit red on the inside.

Carve steak off the T-bones and cut into stir fry strips.

Cut the peppers and onions into stir fry strips.

Heat the frying pan with olive oil on medium high heat. Place the meat stir fry, peppers and onions in it. Fry the mixture covered till meat and peppers are done. Turn often with spatula. Don’t sear the peppers or they turn black and soggy. For added zest, buy the four different kinds of small peppers and add them to the mix.

Put the 2 cups rice into a pot with 4 cups water. Cover and bring to a boil.

Turn heat down and simmer covered for between 20-30 minutes until water is steamed and absorbed making the rice fluffy. It takes longer to absorb water than regular white rice alone. You can take the top off the rice after about 20 minutes. This rice can be used for any dish.
The T-bones are still pretty tasty after you cut off the meat. So while you are waiting for the rice and stir fry to be done you can fight with your kids over who is going to gnaw on the bones. They are good appetizers for guys with no teeth. Then give the bones to your dog.
When the rice is done put the stir fry over a bed of rice. This combination should serve about 4 or more hungry people.
