4 ripe bananas
½ c brown sugar or pure maple syrup
½ vegetable oil
1 ½ tsp cinnamon
¾ tsp salt
1 c whole wheat flour
1 ½ c white flour
1 tsp baking powder
1 tsp baking soda
½ cup raisins or chocolate chips (optional)
Mash bananas. Add oil, sugar or syrup, salt, cinnamon and mix. Add flours, baking powder, and baking soda and mix.
Spoon into greased tins or muffin cups about ⅔ full. Bake at 350F for 20 to 25 minutes until slightly brown on top.
